I told you we were sharing a few recipes from Greg, our service tech here at Jackson Heating and Cooling. Now his idea of sharing “ingredients” is a bit more generic than we would share as women. But for me that’s ok. I mean, in all reality, I rarely every use “exact” ingredients anyway. Maybe I’m wrong here, but I think most women don’t. I’ll sprinkle a little of this, a little of that and just know it will turn out good in the end. So my point is, if you’ve come here for exact ingredients then you may be disappointed. Nevertheless, this grilled trout recipe with tomatoes, peppers and onions seriously does look pretty amazing. I mean I don’t know how you can go wrong with Big Green Egg style trout. Please note that he did not use a plate setter.
For this recipe, you’ll need the following ingredients:
- Garlic Salt
- Black Peppercorns
- Bell Pepper
- Bacon Bits
Here is what he did to make the famous “Greg style – grilled trout with tomatoes, peppers and onions”
- Fire up the Big Green Egg to 300º
- Sprinkle the fish with garlic salt and crushed black peppercorns
- Finely dice tomatoes, bell pepper and onion and sprinkle over the fish
- Additionally sprinkle bacon bits over the fish
- Place the fish -skin side down- onto your Big Green Egg for 25 minutes.
Here’s what you get when it’s all done:
He paired this main entree with jalapeno poppers and potato salad. A very well rounded meal if you ask me. And in case you’re wondering, this recipe is completely gluten free AND so are the side dishes! Just remember, if you’re going gluten free, no double dipping in the mayo (potato salad) or cream cheese (poppers). When I say double dipping, I just mean don’t dip a knife in your mayo jar then smooth it all over your bread and dip it back in. That completely contaminates the product and causes a cross contamination issue. Ask my kids. They will tell you all about not double dipping in mammas Nutella jar.
